How to cook Salted Egg with Squid

A salted duck egg is an Asian preserved food product made by soaking duck eggs in brine, or packing each egg in damp, salted charcoal. It gives a rich, salty, spicy flavour to dishes.
It can be a bit of a task working with salted egg and balancing the flavours whilst creating from scratch. We've taken the had part out with our Sijori Salted Egg Spice Mix where you can easily create a delicious salted egg dish in no time!

50g Sijori Salted Egg spice mix
5 Garlic cloves , finely chopped
4 Bird's eye chilli , red or green and finely chopped
4 Curry Leaves , remove from stem
150g Butter
600g Calamari , store bought crumbed or battered
Salt , season to taste
Pepper , season to taste
Sugar , season to taste
Argula
Spring onion
Red chilli
In a pot, heat up oil to deep fry store bought calamari according to instructions.
In a seperate wok, melt the butter. Sauteee chilli, garlic and curry leaves for 2-3mins
Combine Sijori Salted Egg spice mix and sautee well.
Toss in deep fried calamari into the sauce and coat evenly.
Serve on a bed of aragula and garnish with spring onions and red chilli.
