How to make Curry Laksa
An iconic Malaysian dish found around the world, the rich flavours of this noodle dish is found in its broth that has a coconut milk base. Like many Malaysian dishes, it starts with a blended spice paste of turmeric, galangal, lemongrass, and shrimp paste, and cooks down that blend to concentrate flavors; shrimp or chicken broth turns that thick paste to a broth, and the coconut milk is added toward the end.
100g Sijori Sambal Nasi Lemak
500ml Coconut Cream
250ml Evaporated Milk
1tbsp Condensed milk
30g Vietnamese Mint
300g Tofu Puffs
Egg Noodles/Rice Vermicelli Noodles
Blitz onion, lemongrass and galangal into a paste and set aside.
In a large pot, sauté the blended paste with Sijori Sambal Nasi Lemak. You want to do this for about 10-15 mins until the natural oil separates and the aroma permeates the room.
Once the paste turns glossy, add prawn heads or chicken bones (skip this step if making a Vegetarian version) Pour the stock and Vietnamese mint and let it come to a boil.
Once soup comes to a boil, lower the heat and combine coconut cream, evaporated milk and condensed milk.
Add fishball, fishcake and tofu puffs.
Season to taste with salt & sugar.
Serve Laksa broth with blanched noodles and all the extra condiments and trimmings
